Disgorged in January 2023 with a dosage of one gram per liter, the 2012 Bouzy Grand Cru La Grande Récolte hails from a time when Antoine Paillard had already begun working alongside his father during harvest and vinification, although some changes have since taken place, particularly in terms of yield management and refinement of barrel program. Derived from four old-vine parcels, it’s showing very well, displaying only the earliest signs of maturity, soaring from the glass with a bouquet of dried flowers, pear and brioche, mingling with orange zest. Medium to full-bodied, ample and concentrated, with bright acidity, firm chalky grip and a precise, mineral finish, it is elegant and refreshingly racy.

Disgorged in November 2023 with a dosage of two grams per liter, Paillard's 2019 Taissy Premier Cru derives from old-vine Pinot Meunier, planted in 1963, sourced from the west-facing lieu-dit Les Dessus de Monthouzons in Taissy. The vineyard is distinguished by shallow, 50-centimeter layers of clay and limestone topsoil. Upon pouring, the wine unfolds to reveal a rich bouquet of red apple and dried apricot, mingling with delicate notes of sweet pastries and clear honey. Full-bodied and muscular, it is charming and pillowy, expansive and textural, with succulent yet vibrant acidity and a lingering, perfumed finish. Structurally, it presents a more generous profile, with less tension than the Ludes bottling—another Pinot Meunier-based cuvée, which is sourced from purchased fruit.

Paillard’s NV Bouzy Grand Cru Les Parcelles XX hails from the 2020 vintage and, in keeping with the tradition, incorporates 20% reserve wines. It embodies the signature blend of 80% Pinot Noir and 20% Chardonnay, sourced exclusively from the sun-drenched, south-facing slopes of Bouzy. The bouquet is expressive, unfolding with aromas of pear, ripe citrus and warm spices, mingling with nuances of toasted bread and orange zest. On the palate, it is medium- to full-bodied, showcasing a livelier, more luminous fruit profile than its predecessor, driven by racy acidity and finishing with a pronounced saline finish. True to the estate’s approach, maturation take place in 350-liter oak barrels, with the final cuvée composed from a mosaic of approximately 25 distinct parcels across Bouzy. The dosage is set at two grams per liter.
