Guillaume Doyard has been working hard on his still wines for several years now, and with the 2020 Coteaux Champenois Ay Rouge he is really emerging as a very serious player in this category. Produced from the lieu-dit Bonottes in Ay (Doyard has also planted some Burgundian massal selections in his home village of Vertus, so watch this space), it's a sensual, supple, medium-bodied red evocative of cherries, sweet red berries, petals and spices. The wine's filigree texture and mineral finish mark it out as distinctively Champenois, even if the wine's elevage and depth of fruit clearly nod to the Cote d'Or.

From an east-facing site in Avize, not far from Les Avises, informed by the late-ripening season, the 2016 Extra-Brut Blanc de Blancs Voie d'Oger, disgorged in June 2024 with 1.6 grams per liter dosage, has turned out very well. Unfurling from the glass with notes of beeswax, lemon zest, fresh hazelnut and dried white flowers, it is medium-bodied and textural yet bright, with a more tightly knit and mineral personality than Monts Ferres. Laden with racy acidity and with a powerful chalkiness, it concludes with a long, precise finish. It’s the only wine of the estate vinified entirely in steel.

Doyard's 2012 Extra-Brut Grand Cru Les Lumieres was disgorged only a few days before I tasted it, with just over one gram per liter dosage, but its considerable potential is already amply apparent. Unfurling in the glass with aromas of crisp, golden orchard fruit, green mango and buttery pastry mingled with subtle hints of white flowers and peach, it's full-bodied, vinous and enveloping, with a pillowy mousse, racy acids and a long, resonant finish. Seamless and complete, it's the usual blend of Chardonnay from Mesnil-sur-Oger and Pinot Noir from Ay. I revisited another bottle a few months later, and it only confirmed my original assessment that this is one of the wines of the vintage in Champagne in 2012.

Hailing from a 0.36-hectare walled vineyard that was planted in 1956 just behind the winery in Vertus, the 2019 Extra-Brut Premier Cru Clos de l'Abbaye was disgorged in June 2024 with two grams per liter dosage. “It’s a very chalky terroir, and it has been farmed organically since 2008,” explains Doyard. What makes the resulting wine unique is that the 2019 vintage includes approximately 15% to 20% “muscate” selections of Chardonnay, which brings mildly musky aromatics to the wine. Soaring from the glass with a complex bouquet of peach, grapefruit zest, pear, dried white flowers and walnut, it is concentrated and deep, with considerable flavor intensity, bright acids and a persistent, saline finish. Vinified entirely in barrels, ranging from three to 15 years old, only first and second pressing juices are used, accounting for about 60% of the total juice extract. It’s a particular highlight this year, which Guillaume Doyard calls the finest vintage since he took the reins at the estate in 2017.

Doyard’s latest NV Brut Blanc de Blancs Vendemiaire, disgorged in March 2024 with four grams per liter dosage, is based on the 2019 vintage, with 30% from 2018 and 20% from 2017. Sourced mostly from Vertus (65%), it incorporates fruit from Avize, Oger, Le Mesnil-sur-Oger and Cramant and is vinified in almost equal parts in stainless steel (60%) and oak. Unfurling from the glass with aromas of peach, toasted nuts and pear mingling with lemon zest, it is full-bodied, ample and rather gastronomic, with vibrant acidity and a pillowy mousse, concluding with an expansive finish.
