The 2021 Chablis 1er Cru Vaillons has turned out especially well, mingling aromas of crisp stone fruit, apple blossoms and almonds with subtle hints of youthful reduction in an inviting mélange. Medium to full-bodied, satiny and seamless, it's a pure, vibrant wine built around racy acids.
The 30-hectare Domaine Servin, ably directed by proprietor François Servin and Australian-born winemaker Marc Cameron, continues to number among Chablis's most reliable addresses, and I enjoy serving these wines blind at home and watching while guests grope around among the village's most famous names. As I've written before, there's an emphasis on massal selections of Chardonnay in the vineyards and long élevage on the lees in the winery. What's more, Servin's palate of appellations is enviable. The 2021 vintage has turned out nicely here, delivering a classically styled portfolio that nods back to the 1990s, combined with some of the immediate charm that has tended to characterize the region's wines over the last decade.

Always one of the more demonstrative wines in the range, Servin's 2020 Chablis 1er Cru Vaillons wafts from the glass with aromas of crisp stone fruit, beeswax, clear honey, orange oil and white flowers. Medium to full-bodied, satiny and sensual, it's fleshy and enveloping, with lively acids and a precise, saline finish.

The 2020 vintage looks to be the domaine's finest and most consistent since 2017, and shrewd consumers will find much to admire here.
