オーナー醸造家のブノワ・ドゥソ(Benoit Doussot) は、シャンパーニュ地方で最も新進気鋭な生産者の一人です。
伝統を重んじるフランスのワイン業界では、若い生産者のキャリアは基本、契約畑からスタートします。
そこから徐々に、先祖より代々伝わる畑の栽培を許され、そのブドウから一族のドメーヌとは異なるビジョンを持って、小規模なプロジェクトを行うというストーリー展開が通例です
ピノ・ノワールらしい優雅さとエネルギーを感じる。
土壌
ボレアルは「北に関連する」の意味。文字通りCôtedes Barsの北向きの粘土質石灰岩の土壌。
醸造
直接圧搾、樽にて土着
酵母での発酵、瓶熟合計21ヶ月。ドサージュ ゼロ。

The most chiseled wine in the range this year is the NV Brut Nature Boréal, derived from six north-facing parcels on clay-limestone soils—that is, from cooler sites. Disgorged in September 2024, it unfurls in the glass with aromas of nashi pear, orange zest and lily, mingled with white top notes of ripe red apple and quince. Medium-bodied and rich yet incisive, it’s animated by a tangy spine of acidity and concludes with a long, bone-dry finish. Benoît Doussot recalls that the harvest took place around August 20. The wine comes across as somewhat precocious and is best enjoyed in the near term.
