Clouet's NV Silver Brut Nature Grand Cru is a pure Bouzy Pinot Noir that was disgorged without any dosage. This disgorgement displays a medium intense golden color and a complex and refined bouquet of ripe and pureed apples and discreet chalky as well as brioche aromas. The palate is elegant, straight and fresh, very pure and salty on the finish. This is a challenging Brut Nature that needs to be aged for two or three years to gain complexity and finesse and to smooth its current edges. The finish is mineral, limestone and salty but also a bit drying at this moment.

The 2007 Celebris Extra Brut is the latest rendition of this cuvee, which cellar master Odilon de Varine describes as "not a vintage Gosset but a Gosset vintage"-meaning that it's produced only in years adapted to the house's powerful but austere style. Unwinding in the glass with aromas of lemon oil, marzipan, warm biscuits and wet stones, it's full-bodied, with a deep and concentrated core of ripe but racy fruit, a tangy spine of acidity and an elegant pinpoint mouse, displaying terrific purity and precision.

Aromas of confit citrus, pear, fresh pastry and English walnuts preface Vilmart's 2011 Brut Premier Cru Coeur de Cuvee, a full-bodied, muscular and incisive wine with a deep core, racy acids and a delicately nutty finish. Disgorged a few months ago, it is a terrific effort that transcends the vintage, even if it won't go down as one of the great renditions of Coeur de Cuvee. Champs told me that he picked five or six days after his neighbors, and that appears to be borne out by the wines body and structure.

The 2006 Brut Cuvee Rare is a rich, gourmand rendition of this prestige bottling, unfurling in the glass with a complex bouquet that mingles aromas of yellow orchard fruit, pears and fresh pineapple with nuances of buttered toast, iodine and smoke. On the palate, the wine is full-bodied, broad and textural, while remaining fresh and surprisingly tight-knit at the core, concluding with a long and saline finish.
There's sufficient structural tension here to promise more than a decade's graceful evolution, and although this is nicely balanced, it's a generous, sun kissed rendition of the Cuvee Rare that reflects the warm vintage. The blend is 70% Chardonnay and 30% Pinot Noir.
